Cabbage Ramen Chicken Salad For the salad: 1 small head of Cabbage, shredded or thinly sliced 1 small head of sliced lettuce ( iceburg works good with the green parts only ) cut up in tiny chunks 4 Green onions, Thinly sliced 2 Tablespoons Sesame seeds, lightly toasted 1/4 cup Cilantro, leaves only 3 Tablespoons toasted Almonds, sliced 2 packages of uncooked Ramen noodles, crushed into tiny chunks For the Dressing: 4 Tablespoons Sugar 1/2 cup Sesame oil or Peanut oil 1/2 cup Vegetable oil 1 teaspoon black pepper 6 Tablespoons of Rice Vinegar 1 Teaspoon minced ginger ( or ground ginger is okay ) 1 Ramen seasoning mix packet, such as Chicken or Vegetable 1 to 2 cupsw of leftover Chicken breast, shredded Combine salad ingredients in a big bowl. Mix dressing and pour over salad - mix well, toss in chicken . Refrigerate for at least an hour Serves 6 to 8
